400 grams Spinach
1 onion
2 Tbsps butter (plus butter for ramekins)
50 grams Crème fraiche
2 Tbsps freshly grated Parmesan
salt
Nutmeg (freshly grated)
4 eggs
2 Tomatoes
1 Tbsp freshly chopped parsley

Preparation steps

Preheat the oven to 200 ° C upper and lower heat.

Rinse, clean and coarsely chop spinach. Peel onion and chop finely. Heat butter in a pan and saute onion for about 1-2 minutes or until translucent. Add spinach and saute until all liquid evaporates. Remove from heat, add crème fraîche and Parmesan, season with salt and nutmeg. Spread mixture in four ovenproof ramekins. Break eggs and top each ramekin with an egg.

Bake in preheated oven at 200°C (approximately 400°F) for about 10 minutes.

Rinse and quarter tomatoes, remove seeds and dice into small cubes.

Remove ramekins from the oven and sprinkle with tomatoes and parsley. Serve.
