1 ½ ozs Baby spinach
2 ozs Deli ham
1 small onion
1 garlic clove
2 Tbsps Canola oil
2 Tbsps Sour cream
salt
peppers
4 eggs

Preparation steps

1.

Rinse and spin dry spinach. Cut ham into thin strips.

2.

Peel onion and garlic and chop finely.

3.

Heat 1 teaspoon oil in a pan. Saute onion, garlic and ham over medium heat for about 4 minutes.

Grease 4 oven safe dishes with remaining oil and scoop onion mixture into each. Top with sour cream and a little salt and pepper.

5.

Gently break 1 egg into each dish and distribute spinach around the yolk. Season again with salt and pepper.

6.

Place dishes in a baking dish filled with hot water and bake in a preheated oven at 400°F for 6-8 minutes. Serve hot.
