- ¼ oz instant Dry yeast
- 1 ⅔ cups lukewarm water
- 1 tsp salt
- 2 tsps caster sugar
- 1 cup Whole wheat flour
- 3 cups Bread flour
- ¾ cup dried Apricot (very finely chopped)
- 3 ½ ozs white chocolate (chopped)
Preparation steps

Dissolve the yeast in the water, stirring well. Put the salt, sugar, and both the flours into a bowl. Add the yeast liquid and mix together to make a soft but not sticky dough. Add a little more flour if necessary. Add the apricot pieces and knead in. Knead for about 3 minutes.

Divide the dough into eight pieces. Roll each piece into a sausage shape about 30cm long. Twist into a pretzel shape and place on a parchment lined baking tray. Cover with cling film and leave to rise in a warm place for about 30 minutes.

Heat the oven to 220°/200°C fan/425°F/gas 7. Bake for about 10 minutes until risen and golden brown. Cool on a wire rack.

Melt the white chocolate in a bowl over a pan of hot but not boiling water. Take each pretzel in turn and dip halfway in the chocolate. Shake off any excess and place on a sheet of baking parchment to set.
