Ingredients
for
8
- Ingredients
- 16 medium sized Sweet potato
- 1 bunch scallions
- 1 Apple
- 1 Tbsp lemon juice
- 200 grams Cheddar cheese
- salt
- freshly ground peppers
- Aluminum foil
- 2 Tbsps vegetable oil (for brushing)
Preparation steps
1.
Rinse the potatoes and boil in salted water for about 20 minutes. Trim and rinse the scallions and cut into thin rings. Rinse and quarter the apple, remove the core and grate finely. Drizzle with the lemon juice.
Divide the tinfoil into 16 pieces and brush with oil. Cut a small lid from the potatoes and hollow out slightly.
2.
Mash the potato with a fork. Grate the cheese, mix with the scallions, the apple and the potato and season with salt and pepper. Spoon the mixture back into the potatoes, replace the lid and wrap the potato firmly in the aluminum foil.
Cook on the grill over medium heat (or in the oven at 160°C / approximately 325ºF) for about 10 minutes.
Serve hot.
