- 2 garlic cloves
- 2 Tbsps olive oil
- 1 Tbsp sweet ground paprika
- 1 Tbsp Madras curry powder
- 1 tsp Cumin
- ½ tsp salt

- 1 ½ lbs Sweet potato
- 1 lemon

Preparation steps
Peel the garlic and finely chop.
Mix garlic with oil, paprika, curry powder and cumin seeds and then season with salt and pepper.
Peel the sweet potatoes and cut into 3/4-inch thick rounds.
Place sweet potato rounds in a bowl and toss to coat with the spice oil.
Spread sweet potato rounds evenly on a baking sheet lined with parchment paper. Bake in a preheated oven at 400°F/convection 350°F for about 35 minutes.
Squeeze lime over the sweet potatoes and serve immediately.
