Why is the sweet potato considered a super tuber? The sweet potato contains a lot of fiber, minerals, and vitamins and is particularly rich in beta-carotene (a precursor of vitamin A), folic acid, potassium, and vitamin E.

To avoid accidentally cutting through the sweet potatoes, it is easier to create a cut boundary for yourself. This can be done, for example, by placing two flat wooden cooking spoons or chopsticks to the left and right of the sweet potato slice. If you like, you can serve the sweet potato snack with fresh herbs such as cilantro or parsley.

2 Tbsps olive oil
1 tsp sweet paprika
½ Avocado
2 ozs cream cheese
1 Tbsp lemon juice
4 ozs Cherry tomatoes
1 ½ ozs Feta
½ bunch scallions

Preparation steps

Clean sweet potato, wash and pat dry. Cut sweet potato into 6 slices about 1-inch thick and cut individual slices crosswise with a knife to create the lattice shape. Place sweet potato slices on a baking sheet lined with baking paper.

Mix olive oil with spices and brush slices with it. Bake sweet potatoes in preheated oven at 225 °C / 425˚ F for approx. 15-20 minutes.

In the meantime, remove the pit from half the avocado and lift the flesh out of the skin. Chop the flesh with a fork, mix with cream cheese and lemon juice and season with salt and pepper.

Crumble the feta, wash and halve the tomatoes. Clean the spring onions, wash and cut into diagonal rings. Remove sweet potato slices from oven and spread with avocado cream cheese. Garnish with feta, tomatoes and scallions and serve as a sweet potato snack.
