500 grams waxy potatoes
4 garlic cloves
4 thyme
½ tsp black peppercorns
½ tsp pink peppercorns
½ tsp Coriander
1 tsp cancel Sea salt
3 Tbsps olive oil
1 Tbsp liquid honey

Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Peel carrots, parsnips, beets, onions and potatoes. Cut carrots, potatoes and parsnips into quarters. Cut onions in half. Squeeze garlic through a garlic press. Strip leaves from 2-3 sprigs of thyme. Grind black and pink pepper coarsely in a mortar along with coriander seeds. Add salt and thyme leaves to the mortar and mix. Place all prepared vegetables on a baking sheet, cover with herb mixture, mix and drizzle with oil. Bake in the preheated oven for approximately 1 hour. Occasionally stir during cooking time and cover with aluminum foil if necessary.

Remove from the oven, drizzle honey over vegetables and leave about 5 minutes to caramelize slightly. Serve immediately.

Serve with a yogurt dip if desired.
