- 18 ozs ripe Banana
- ½ Vanilla bean
- 7 ¼ ozs Skyr
- 1 Tbsp flaxseed oil
- 3 ¼ ozs planed/blanched almonds
- 4 tsps Maple syrup
Preparation steps
Wash bananas unpeeled, pat dry and place on oven rack. Bake in a preheated oven at 200 °C / 400 ˚F until the peel is evenly black; this takes about 10 minutes.
Meanwhile, cut the vanilla bean in half lengthwise and scrape out the pulp with a knife. Stir Skyr with the pulp and flaxseed oil until smooth. Roast almonds in a hot pan without fat over medium heat for 3 minutes.
Remove bananas from the oven. Separate the upper half of the peel from the hot fruit. Divide skyr among 4 plates, arrange bananas on top. Drizzle with maple syrup and serve sprinkled with almonds.
