3 ½ ozs ground walnut kernels
3 ½ ozs sugar
2 tsps Baking powder
½ tsp cinnamon
1 tsp Organic lemon zest
3 Banana
2 ozs milk (whole)
2 eggs
5 Tbsps Canola oil
5 ozs Blackberry
4 Tbsps walnut kernels

1 Loaf pan (approx. 30 cm long)

Preparation steps

Line the baking pan with baking paper. Mix flour with ground walnuts, sugar, baking powder, cinnamon and lemon zest. Peel bananas, cut 1 banana in half lengthwise, finely mash the rest with milk. Mix in eggs and oil, add to flour mixture and stir until smooth.

Sort blackberries, wash and pat dry. Chop walnuts and fold into the dough. Fill the dough into the pan, cover with the banana halves and bake the banana bread with blackberries in a preheated oven at 180 °C / 350 ˚F for 50 minutes (test with a toothpick or skewer).

Remove bread from the oven, let cool briefly, remove from pan and let cool completely on a cooling rack. To serve cut into 14 slices.
