1 onion
2 Tbsps vegetable oil
150 grams Pearl barley
100 Smoked bacon (in strips)
½ l Beef broth
½ l Vegetable broth
salt
freshly ground peppers
150 grams fresh Spinach
3 Sausage
20 grams clarified butter
2 Tbsps scallions

Preparation steps

Peel the onion, chop finely and cook until translucent in a pot with oil. Add barley and bacon and pour in the broth. Season with salt and pepper and simmer for about 1 hour over medium heat.

Meanwhile trim the spinach, rinse and shake dry. Remove sausages from casings, form meat into balls and fry in a pan with clarified butter until golden brown. Chop the spinach coarsely and add to the stew. Season the stew again, add the sausage and and cook 5 minutes longer. Transfer to warmed plates and serve sprinkled with chives.
