- 1 ½ Tbsps olive oil
- 1 onion (finely chopped)
- 2 large carrots (peeled and finely diced)
- 2 sticks Celery (finely diced)
- 1 cup Pearl barley
- 1 cup canned, chopped Tomatoes
- 5 cups low-sodium vegetable stock
- ¾ cup fresh green pea
- 1 Tbsp flat-leaf parsley (finely chopped)
- salt
- freshly ground peppers
Preparation steps

Heat the oil in a large saucepan set over a medium heat until hot.

Add the onion, carrot, celery and a pinch of salt, sweating for 5 - 6 minutes until softened.

Stir in the pearl barley, chopped tomatoes and stock, and bring to a boil over a moderate heat.

Once boiling, cover the saucepan with a lid, and cook over a low heat for 40 - 45 minutes until the pearl barley is tender.
5.
Stir through the petit pois and the chopped parsley and season to taste with salt and pepper. Cook for a further 2 minutes until the petit pois are tender.
6.
Ladle into bowls and serve.
