1 l Beef broth
1 bay leaf
2 carrots
2 stalks Celery
4 scallions
150 grams button Mushroom
1 tsp dried thyme

Preparation steps

1.

Rinse the barley and drain well. Bring the broth and bay leaf to a boil. Add the barley. Simmer for about 20 minutes.

Peel and coarsely grate the carrots. Rinse the celery and cut into thin slices. Rinse the scallions and cut into thin rings. Rinse and slice the mushrooms. Add the carrots, celery, scallions and mushrooms into the soup. Add the thyme and season with salt and pepper. Simmer for about 20 minutes.

3.

Remove the bay leaf, season to taste and serve.
