Preparation steps

1.

Break the eggs into a bowl. Season with salt and pepper and whisk vigorously until light and frothy. Heat the butter in a non-stick pan and pour in the eggs. Gently press the eggs from the side of the pan with a spatula, gently lifting and turning the pan as they cook. 

2.

Roll the edges of the omelette to the center of the pan, slide onto a plate, season with additional salt and pepper, if desired, and serve.
