9 ozs Pastry flour
2 Tbsps sugar
12 ozs milk

Preparation steps

1.

Separate the eggs and beat the yolks with the flour, sugar and milk until smooth. Let stand for about 30 minutes. Beat the egg whites with a pinch of salt until stiff. Gently fold into the batter. 

2.

Preheat waffle iron and grease with vegetable oil. Ladle a small amount of the batter into the waffle iron and cook until golden brown. Keep the finished waffles warm in a 175°F oven and continue making waffles with the remaining batter. 

3.

Dust with powdered sugar and serve with honey, maple syrup or other desired toppings.
