2 Haddock fillet (175 g | 6 oz each)
1 cup milk
kosher salt (to taste)
freshly ground Black pepper (to taste)
cup unbleached all-purpose flour
½ cup Cracker
¼ cup Canola oil (or soy bean oil)
2 bulky or sandwich Rolls
0.333 cup Tartar sauce
1 fresh Tomato (sliced)
½ Red onion (thinly sliced)
4 Lettuce

freshly ground Black pepper (to taste)

Preparation steps

Preheat oven to 450º F.

Soak haddock fillets in milk for 5 minutes. Remove fish from milk and season with salt and pepper. In a shallow bowl or pie tin, combine flour and cracker meal. Dredge the haddock on both sides in the flour mixture, evenly coating it, shaking off any excess.

In an ovenproof 10-inch skillet or pan over medium-high heat, add the oil and heat it to just below the smoking point. Place the haddock pieces in the pan. Reduce heat to medium; when crust appears golden brown, about 3 or 4 minutes, flip the haddock over and place the pan in the oven for 4 to 5 minutes, to finish them off.

Slice the bulkie roll horizontally with a sharp, serrated knife. Toast the bulkie rolls in the oven for about 2 minutes, or until lightly toasted. Put a layer of lettuce, tomato, and onion on the bottom half. Season with salt and pepper. Place haddock fillet on top and close the sandwich. Serve with tartar sauce on the side.
