- 6 cups Beef (diced)
- 2 Tbsps olive oil
- 2 onions (diced)
- 2 garlic cloves (diced)
- 1 Tbsp tomato puree
- ⅔ cup Red wine
- 1 ⅔ cups Meat stock
- 1 bay leaf
- 2 Leeks (cut into rings)
- 6 ½ cups Tomatoes (peeled and diced)
- ⅔ cup black Olives (pitted)
Preparation steps
1.
Fry the meat in hot oil and add the onions, garlic and tomato puree. Deglaze with the red wine and some of the stock. Add the bay leaf and braise for approx. 30 minutes on a low heat stirring occasionally. If necessary add some more stock.

Add the leek and the tomatoes. Season with salt and ground black pepper and braise for another 60-90 minutes. Add the olives towards the end of cooking. Season with salt and ground black pepper and serve.
