Preparation steps

1.

Rinse the chile peppers, cut in half lengthwise, remove seeds and white ribs, and finely dice. Peel and press the garlic through a garlic press. Rinse the broccoli and cut into florets. Cook the broccoli in a pot of boiling salted water for 3 minutes. Drain thoroughly. Cut the baby corn in half. Rinse the tomatoes.

2.

Remove the skin and tendons from the beef. Thinly slice the beef across the grain. Place in a bowl.

In a bowl, stir the garlic with the soy sauce, fish sauce, lime juice and sesame oil. Pour the sauce over the beef and marinate for 30 minutes.

3.

Remove the beef from the marinade and pat dry. Heat the oil in a wok. Add the beef and cook for 2 minutes. Stir in the broccoli and baby corn, and cook briefly. Add the marinade and chile pepper, and bring to a boil. Stir in the tomatoes and cilantro until thoroughly combined.
