40 grams cold butter
80 grams finely grated Parmesan
1 egg
60 grams Pastry flour
salt
freshly ground peppers
1 l Beef broth
2 scallions
1 sprig Basil
1 Tbsp chopped Pistachio

Preparation steps

For the dumplings: combine butter with cheese, egg and flour and knead until smooth dough forms. Season with salt and pepper. Add flour, if necessary, to make dough easily malleable. Cover and refrigerate for 1 hour.  Tear little pieces of dough and place, one by one, into boiling salted water. Simmer for about 5 minutes.

Bring broth to a boil, season with salt and pepper. Rinse and dry scallions, cut into thin rings. Rinse basil, shake dry, pluck off leaves and cut into strips.

Remove dumplings with a slotted spoon and place into soup bowls. Top with broth, sprinkle with scallions, basil and pistachios. Serve.
