Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Peel and chop the onion and garlic. Heat the oil. Add the ground meat and saute. Add the onion and garlic and continue to saute. Drain the beans and add, with the corn, to the ground beef. Season with salt, pepper and chile powder.

Rinse the tomatoes, quarter and remove seeds. Dice half of the tomato finely. Cut the remaining flesh into cubes and add to the meat mixture. Add the remaining salsa ingredients to the diced tomatoes and stir to combine.

Fill the tortilla with 2/3 of meat mixture, roll it up and cut in half crosswise. Spread the remaining meat mixture on the bottom of a shallow baking dish. Place the tortilla rolls on it. Grate the cheese finely and mix with the sour cream. Spread over the enchiladas. Bake for 30 minutes. Sprinkle with bacon bits and serve.
