- 2 Tbsps vegetable oil
- 16 ozs Beef fillet (in one piece)
- 2 ripe Avocados
- ⅞ cup Crème fraiche
- 1 Lime (juiced)
- 2 Tbsps chopped cilantro
- 4 Flour tortillas
- Tomato salsa (to serve)
- shredded Lettuce (to serve)
- Sour cream (to serve)

Preparation steps

Heat the oven to 220ºC (200º fan) 425ºF, gas 7.

Heat the oil in an ovenproof frying pan (skillet). Season the beef with salt and pepper and sear on all sides until browned. Transfer the pan to the oven and cook for 15-20 minutes.

Meanwhile, make the avocado cream. Mash the avocados with the creme fraiche, lime juice and chopped coriander. Season with salt and pepper and set aside.

When the beef is cooked, remove from the oven and let rest for 5 minutes. Place the tortillas in the oven to heat through gently.

To serve, slice the meat and fill the tortillas with meat slices, avocado cream. tomato salsa, shredded lettuce and sour cream. Garnish with coriander leaves.
