- 2 sprigs cilantro
- 2 sprigs parsley
- 4 sprigs thyme
- 1 onion
- 2 garlic cloves
- 2 chili peppers
- ½ tsp Coriander
- ½ tsp peppercorns
- 2 Tbsps Wine vinegar
- 4 Tbsps olive oil
- 1 splash lemon juice
- Sea salt
- 800 grams Beef fillet (ready to cook parried)
Preparation steps

To make chimichurri sauce: Rinse cilantro, parsley and thyme, shake dry and finely chop leaves. Peel and very finely chop onion and garlic. Rinse, halve and finely chop chiles. Crush coriander seeds and peppercorns in a mortar and pestle. Mix crushed spices with herbs, onion, garlic, chile, vinegar and 2-3 tablespoons of oil and season with lemon juice and salt. For best results, chill overnight, or at least 1 hour.

Rinse beef fillet, pat dry and cut into 8 slices. Brush with remaining oil and cook on a hot grill, turning occasionally, 4-10 minutes (depending on the desired degree of doneness).

Divide beef among plates, and serve with chimichurri sauce.
