For the onion crust
4 yellow onion
2 garlic cloves
2 Tbsps butter
salt
freshly ground peppers
6 Tbsps dry white wine (such as Riesling)
8 Tbsps Crème fraiche
5 Tbsps breadcrumbs
1 egg yolk

8 Steak (à 90-100 grams)
2 Tbsps clarified butter (plus more for baking sheet)
2 Tbsps scallions (for garnish)

Preparation steps

Preheat the broiler. Grease a baking sheet. For the onion crust: Peel and chop the onions and garlic. Heat the butter in a pan and saute the onions and garlic until translucent. Season with salt and pepper, pour in the wine, remove from heat and let cool. Stir in the crème fraîche, breadcrumbs and egg yolks.

Heat the clarified butter in a skillet and saute the steak about 1 minute per side, Season with salt and pepper. Place the steaks on the baking sheet, spread the onion mixture on top and broil until golden brown, 5-6 minutes. Remove, place on warmed plates and serve garnished with chopped chives.
