2 Tbsps clarified butter
4 onions
4 garlic cloves
1 Tbsp ground paprika
½ l Beef broth
1 tsp Caraway

1 Tbsp lemon juice
3 Tbsps Tomato paste
1 carrot
200 grams Tomatoes
cornstarch
50 grams Cashews
Fresh herbs (for garnish; such as marjoram)

Preparation steps

Peel onions and garlic and chop finely. Peel carrot and dice finely. Cut stew meat into 2 cm (approximately 1 inch) cubes. Heat clarified butter in a saucepan and brown meat cubes in portions. Remove meat from pan when browned and set aside. Saute onions and garlic in the remaining drippings. Add carrot and tomato paste.

Add stew meat to pan again, add broth and season with paprika. Add 250 ml (approximately 1 cup) of water and lemon juice to deglaze pan. Season with cumin, salt and pepper. Simmer everything over low heat covered for approximately 1 hour. Stir occasionally and, if necessary, add a little water.

Rinse tomatoes and cut into slices. Add tomatoes to stew about 10 minutes before end of cooking. Season to taste and add cornstarch for desired consistency. Serve immediately garnished with cashews and herbs.
