8 ozs jumbo shrimp (shelled and deveined)
2 Tbsps olive oil

If using wooden skewers, soak in cold water for 15 or 20 minutes prior to use.

Preparation steps

Prepare grill for direct grilling. Heat grill to high heat. When read to cook brush grill grate with oil.

Brush fillets lightly with olive oil and season with salt and freshly ground pepper. Thread prepared shrimp onto wooden skewers and brush with oil. Place the steaks on the hot grill. and cook to taste or for about 4 to 6 minutes per side for medium-rare, or until desired doneness, turning once with tongs. Place skewered shrimp on the grill and cook for about 2 1/2 minutes per side.

Transfer fillets and shrimp to a platter or individual plates. Let rest for several minutes before serving. Serve.
