Ingredients

For the onion crust
4 onions (chopped)
2 garlic cloves (chopped)
2 Tbsps butter
6 Tbsps dry white wine
8 Tbsps Crème fraiche
5 Tbsps breadcrumbs
1 egg yolk
Plus
8 Steak (approx. 90-100 g each)
2 Tbsps clarified butter
2 Tbsps Chives (to garnish)

Preparation steps

1.
Preheat the grill to hot.
2.
Fry the onions and garlic in hot butter. Season with salt and ground black pepper and quench with the wine. Remove from the heat and leave to cool.
3.
Mix together the creme fraiche, breadcrumbs and the egg yolk to form a thick mass and stir in the onions and garlic.
4.
Fry the steaks on all sides in hot clarified butter for one minute and season with salt and ground black pepper.
5.
Place the steaks on a baking tray and spread with the onion mixture. Grill for 5-6 minutes until golden brown then served on preheated plates and garnish with chives.
