Beef with Vegetables

- 400 grams Beef fillet
- 100 grams button Mushroom
- 1 bunch green Asparagus
- 4 Tbsps Vegetable broth
- 2 carrots
- vegetable oil (for cooking)
- 1 tsp ginger (grated)
- 1 garlic clove (chopped very finely)
- 2 Tbsps sunflower oil
- 2 Tbsps butter
- salt
- freshly ground peppers
Preparation steps
Season beef with salt and pepper. Heat oil in a pan and brown beef on all sides on high heat. Continue cooking beef in a preheated oven at 120°C (approximately 250°F) on lower rack for about 20-30 minutes (depending on desired doneness of meat).
Peel carrots and grate finely. Pat dry with a paper towel. Heat oil in a pan and cook until crispy (be careful, risk of splashing). Drain on paper towels.
Trim lower third of asparagus, rinse remaining stalks. Heat 2 tablespoons of butter in a pan and saute asparagus with cleaned and quartered mushrooms. Deglaze pan with vegetable broth, add ginger and garlic, cover and cook for about 10 minutes. Season with salt and pepper and arrange on 2 warmed plates. Cut beef fillet into 4 slices and place 2 of them on vegetables. Top with carrot sticks and serve.
