2 green Apple (such as Granny smith)
2 Tbsps lemon juice
4 cooked Beets
4 Tbsps olive oil
2 Tbsps white balsamic vinegar
salt
freshly ground peppers
250 grams Feta
2 Tbsps peeled Shelled pistachio
2 Tbsps Beet sprouts

Preparation steps

1.

Rinse the apples, core with an apple corer and thinly slice. Mix immediately with the lemon juice.Thinly slice the beets.

2.

Mix the oil with the vinegar and season with salt and pepper. Stack 4 slices of beets on top of each other, scatter cheese over and top with 4 apple slices.

3.

Repeat until all the beet and apple have been used. Drizzle the stacks with the vinaigrette and serve drizzled garnished with pistachios and watercress leaves.
