Ingredients

- 28 ozs Beets
- 3 Tbsps olive oil
- salt
- peppers
- ½ tsp ground Cardamom
- 1 generous pinch cinnamon
- ½ tsp ground Cumin
- 3 ozs walnut kernels
- 1 bunch Radish
- 5 ozs Feta
- ¾ oz Fresh herbs (1 handful; e.g. chives, parsley, sage, rosemary)
- 2 Tbsps balsamic vinegar
Preparation steps
Clean beet, peel with oiled hands or disposable gloves and cut into bite-sized pieces. Mix with oil and season with salt, pepper, cardamom, cinnamon and cumin. Place in a baking dish and bake in a preheated oven at 200 °C / 400 °F for 35-40 minutes.
Meanwhile, coarsely chop walnuts. Clean radishes, wash and depending on size leave whole or halve or quarter. Crumble feta. Wash herbs, shake dry and chop finely.
Remove beet from oven and drizzle with balsamic vinegar. Serve sprinkled with nuts, feta, radishes and herbs.
