3 ozs peeled Hazelnuts
8 ozs lamb's lettuce
14 ozs Halloumi cheese
4 Tbsps olive oil
2 Tbsps dark Balsamic glaze
freshly ground peppers

Preparation steps

1.

Peel beets and cook in boiling salted water for about 40 minutes or until al dente. Blanch nectarines, rinse with cold water, peel, halve and remove seeds, cut the pulp into slices. Toast nuts in a dry pan and let cool.

Rinse and spin dry lettuce. Cut cheese into 1/2 inch thick slices, arrange on a lined with parchment paper baking sheet and roast under a hot broiler for 3-4 minutes or until golden brown.

Remove from oven and and cut into cubes. Rinse beets in cold water and cut into wedges. Arrange lettuce, beets, nectarines, nuts and cheese cubes on plates. Drizzle with oil and balsamic syrup. Season with salt and pepper and serve.
