11 ozs Greek yogurt
1 ¾ ozs tender Oats
6 ozs whole spelt flour
1 pinch salt
½ cube Yeast
10 ozs lukewarm milk (whole)
1 ¾ ozs melted butter
2 eggs
3 ½ ozs Dark chocolate (min. 70% cocoa content)
2 ¾ ozs ground almonds
¾ oz Highly deoiled cocoa powder (3 TBSP.)
3 Apricot
3 yellow Plum

1 Mini food processor, 1 Hand mixer, 1 Grater, 1 Waffle iron

Preparation steps

1.

Cut vanilla bean in half lengthwise and scrape out pith with a knife. Mix 2 tsp. vanilla pulp with 1 tbsp. sugar and yogurt. Chill the yogurt.

Grind oat flakes in a blitz chopper to fine flour. Mix the oat flour with the remaining vanilla pulp, sugar, spelt flour and 1 pinch of salt in a bowl. Crumble yeast and add to the other ingredients with milk, butter and eggs.

Mix everything with a hand mixer until a smooth dough. Cover dough with a clean tea towel and let rise in a warm place for about 1 hour. Meanwhile, finely grate chocolate and set aside 2 tablespoons for garnish.

Add remaining chocolate with almonds and cocoa powder to waffle batter and fold in carefully. Preheat the waffle iron, grease if necessary. Pour in about 4 tablespoons of batter, close the waffle iron and bake waffles. Use up the rest of the batter in the same way.

5.

While waffles are baking, wash and pit apricots and plums and cut into wedges. Place Belgian oatmeal chocolate waffles on plates and arrange with yogurt, apricots, plums and grated chocolate.
