- 200 grams Blackberry
- 200 grams Strawberries
- 5 eggs
- 100 grams powdered sugar
- 1 pinch salt
- 200 milliliters Whipped cream
Preparation steps
1.
Rinse the berries, trim and puree. Separate the eggs, placing the yolks in a metal bowl and whisking slightly with the sugar.
2.
Set the bowl on a hot water bath.
3.
Heat without boiling 7-10 minutes until thick and creamy.
4.
Remove the bowl from the water bath and place in an ice water bath.
5.
Beat above the ice water bath.
6.
Beat the egg whites with the salt to a stiff snow. Whip the cream.
7.
Stir the fruit puree with the egg yolk mixture.
8.
Combine the egg whites and cream.
9.
Combine the mixtures and freeze in small bowls for at least 4 hours.
10.
To serve, take out of the freezer, dip the bowls briefly in hot water. Turn out onto plates.
