¼ l black Currant juice
1 pc untreated Lemon peel
3 Tbsps sugar
lemon juice
1 ½ tsps cornstarch
250 grams Strawberries
2 Tbsps chopped Pistachio

Preparation steps

1.

Rinse berries, pat dry, and remove stalks. Boil berries, currant juice and lemon zest and simmer for 5 minutes. Strain the berry juice through a sieve. Add the cornstarch with 1/2 cup water until smooth. Heat berry soup again and stir in cornstarch and simmer for another 5 minutes.

Season with sugar and lemon juice. Remove from heat and let cool slightly. Rinse strawberries, pat dry, cut if necessary into small pieces small and add to the berry soup, let cool. Serve with sprinkled pistachios.
