500 grams black Beans
2 centimeters ginger
1 garlic clove
1 onion
2 Tbsps vegetable oil
50 grams Pastry flour

200 grams small, peeled shrimp

Preparation steps

1.

Soak the beans overnight in plenty of cold water. The next day, drain and cook for about 1 hour in fresh water.

Peel the ginger and garlic. Grate the ginger finely. Press the garlic through a garlic press. Peel the onion and chop finely. Rinse the shrimp and drain.

Heat the oil in a frying pan and saute the onion, garlic and ginger until translucent, then remove from heat.

Drain the beans and cool. Rub off the skin of the beans by rubbing the beans together. (Don't worry if some of the skin remains.) In a blender puree the beans with the onion mixture and flour, generously season with salt and pepper. Coarsely chop the shrimp and mix with the black bean mixture.

Preheat the oven to 80°C (approximately 175°F).

Heat the palm oil in a wide saucepan to 180°F (approximately 350°F). Form the bean mixture into small patties and working in batches fry the patties until crisp, 2-3 minutes. Drain on paper towels and keep warm in the oven while your cook the remaining patties.
