Black Bean Rice with Shrimp

- 1 onion
- 1 garlic clove
- 2 Chicken breasts
- 250 grams shrimp (shelled and cleaned)
- 2 Limes
- 3 Tbsps olive oil
- ½ tsp chili peppers (dried and coarsely ground)
- 250 grams Basmati rice
- 200 milliliters white wine (such as Chenin Blanc)
- 300 milliliters Vegetable broth
- 200 grams black Beans (canned)
- 10 stems Chives
- 2 handfuls lamb's lettuce
- salt

Preparation steps
Peel onion and garlic and chop. Rinse chicken breast fillet, pat dry and chop. Rinse shrimp and pat dry. Squeeze juice from 1 lime and cut other lime into wedges for garnish.
Heat 1 tablespoon olive oil in a deep frying pan, fry chicken over high heat for 3-4 minutes, sprinkle with 1 tablespoon lime juice and remove from pan. Heat 1 tablespoon oil in the pan, fry shrimp over high heat for 3 minutes and season with chile peppers and drizzle 1 tablespoon lime juice.
Heat remaining oil (1 tablespoon) in a pan, fry onion and garlic in pan over low heat for 2-3 minutes until translucent. Add rice and sauté for 1-2 minutes while stirring, add white wine and vegetable broth. Cover rice and cook for 10 minutes over low heat.
Meanwhile, rinse beans in a colander with cold water and drain. Rinse chives, shake dry and cut into small pieces. Rinse lettuce, trim and spin dry. Add chicken, shrimp and beans to the rice and cook covered an additional 2-4 minutes, until the rice is cooked.
Season rice with salt, pepper and lime juice. To serve, arrange lettuce on plates, cover with black bean rice, sprinkle with the chives and garnish with lime wedges.
