- 300 grams Basmati rice
- 1 sm can Saffron
- salt
- freshly ground peppers
- 2 large Tomatoes
- 1 white onion
- Bell pepper (1 each red, yellow and green)
- 2 large Chicken breasts
- 4 Tbsps vegetable oil
- 2 Tbsps Vinegar
- 150 grams canned black Beans
- cilantro (for garnish)
Preparation steps

Rinse rice under running water in a colander. Place in a pot with oil and almost twice the amount of lightly salted water. Sir in saffron. Bring to a boil. Reduce heat to very low, cover and simmer about 20 minutes.

Rinse tomatoes and cut into small pieces. Rinse peppers, cut in half, remove seeds and ribs, pat dry and cut into small pieces. Peel onion and cut into wedges.

Brush chicken breast with a little oil and season with salt and pepper. Grill on medium heat for 5 to 7 minutes per side. Cut into bite-size pieces.

Whisk oil with vinegar, salt and pepper. Toss with the chopped vegetables and chicken. Drain the black beans.
5.
Spoon the rice into bowls. Top with the beans and vegetable mixture. Serve garnished with cilantro leaves.
