1 cup Spelt flour
5 Tbsps cocoa powder
1 pinch salt
3 ½ Tbsps Raw cane sugar
1 stick cold, diced butter
2 eggs
1 cup Blackberry
1 Lime
1 splash vanilla extract
0.6666 cup Crème fraiche
1 cup Greek yogurt
1 Tbsp Maple syrup
1 Tbsp Dark chocolate

Preparation steps

1.

Mix flour with cocoa powder, salt and sugar. Add butter and 1 egg and work into a smooth dough with your hands. Cover and refrigerate for 30 minutes.

In the meantime, half or quarter the blackberries. Zest and juice the lime dividing the two. Mix crème fraîche with Greek yogurt, half of the lime zest, 1-2 squirts of lime juice, maple syrup, vanilla and the rest of the eggs making a custard.

Divide the dough into 4 equally sized pieces, roll them out on a floured work surface (about a 1/4 inch thick) and put them into 4 tartelette pans.

Spread the curd mixture on the molds and place the blackberries on top. Bake Tartelettes in a preheated oven at 180 °C/ 350 °F(convection 160 °C/ 325°F) for 30-35 minutes.

5.

Take the Tartelettes out of the oven, let them cool down for 10 minutes and remove them from the molds. Garnish blackberry tartelettes with remaining lime zest and with grated chocolate as desired.
