150 grams Whole wheat flour
150 grams Buckwheat (finely ground)
1 tsp Sea salt
clarified butter (for cooking)
2 cups Sour cream
1 sm jar Salmon caviar

Preparation steps

Dissolve yeast and sugar in 2 tablespoons warm milk. Cover with a tea towel and let sit for about 15 minutes, until yeast bubbles. Separate eggs. Combine both flours and stir in egg yolks, salt and milk powder to form a smooth dough, stir in yeast mixture and let rest in a warm place for about 1 hour, until volume has doubled. In the meantime, beat egg whites until stiff and fold into dough.

Heat butter in a large pan and pour in a bit of dough. Cook over medium heat for about 5 minutes, until golden brown on each side. Remove and keep warm in an oven preheated to 80°C (approximately 175°F). Repeat until all dough is cooked.

Top each blini with sour cream and some caviar.

Serve with prosecco, as desired.
