1 generous pinch fennel seeds
1 root Fennel
1 stalk Leeks
2 sticks Celery
3 sprigs thyme
lemons
5 peppercorns
5 Tomatoes
1 onion (Peppered with a bay leaf and 2 cloves)
4 Tbsps olive oil
600 grams Fish carcass
white wine
2 generous pinches Saffron
salt
peppers

Preparation steps

1.

Rinse and chop the vegetables. Heat the olive oil in a saucepan. Add the chopped vegetables, thyme and peppercorns. Add 1/4 of a lemon, fennel seeds and peppered onion.

Add the fish carcasses and continue cooking.

3.

Pour in enough white wine and water to cover the ingredients. Add the saffron and simmer for 30 minutes.

Pour everything through a sieve into another pot. Bring to a boul and season with salt and pepper.
