Even smarter
Bulgur is a rich source of satiating fiber and the ham is an excellent source of protein. Additionally, the tomatoes provide lycopene, a valuable antioxidant that fights free radicals.
Feel free to substitute the ham with other meats you like, such as grilled chicken breast or deli turkey.

- 1 ⅔ cups Bulgur
- ½ lemon (juice)
- 2 ½ cups vegetable stock
- 2 handfuls fresh Basil
- 4 Tbsps olive oil
- 3 Tbsps white balsamic vinegar
- 2 cups Cocktail tomatoes (red and yellow, halved)
- 1 cup sliced ham (cut into pieces)
Preparation steps

Bring the bulgur to the boil with the lemon juice and vegetable stock. Turn off the hob, cover and leave to absorb the liquid for a further 20-30 minutes.

Put the basil in a mortar (reserving a few leaves for garnish). Grind it to a paste with the olive oil and a little salt and ground black pepper. Finally stir in the vinegar and check the seasoning.

Transfer the bulgur to a large bowl and stir through the basil dressing. Leave briefly for the flavours to develop then mix through the colourful tomatoes.
4.
Divide between 4 salad bowls and serve garnished with ham and basil leaves.
