1 small chicken (approx. 2-3 lbs)
1 cup chicken stock
4 Tbsps apple Jam
1 Vanilla bean
1 Tbsp Apple juice

1 Pot, 1 Bowl, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Wooden spoon, 1 Fine grater, 1 Whisk, 1 Citrus juicer

Preparation steps

Preheat the oven to 400F.

Mix the plums and apricots with the lemon juice, pepper and cloves and stuff the mixture in the chicken, reserving a few.
3.
Truss the chicken using wooden skewers. Place the chicken a deep ovenproof dish and pour over the stock. Arrange the fruit around the chicken, cover, place in the preheated oven and allow to braise for approximately 45 minutes.
4.
Open the vanilla pod and scrape out the seeds. Mix them with the apple juice and jam, and baste the chicken with the mixture.
5.
Put the vanilla pod in with the chicken, remove the lid and cook for a further 15 minutes. Season to taste.
6.
Arrange the chicken, sauce and fruit on a serving platter.
