2 scallions
1 chili pepper
1 fresh ginger (about 3 cm)
2 Tbsps cilantro (coarsely chopped)
400 grams Pork tenderloin
salt
freshly ground peppers
3 Tbsps Corn oil
1 Tbsp sesame oil
125 milliliters Beef broth
2 Tbsps Sesame seeds
100 grams Frisée
1 Tbsp White vinegar
2 Tbsps soy sauce

Preparation steps

Rinse scallions and chile pepper. Cut scallions diagonally into thin rings. Remove seeds from chile pepper, rinse and cut into strips. Peel ginger and cut into thin sticks.

Season the pork with salt and pepper. Heat 1 tablespoon corn oil with the sesame oil in a pan and brown the pork on all sides. Add scallions, chile pepper and ginger and fry briefly. Add broth, cover and cook meat over low heat for about 10 minutes.

Toast sesame seeds in a dry pan until golden.

Trim, rinse and spin dry lettuce and separate into leaves. Combine vinegar, salt and pepper to taste and remaining corn oil and fold into the salad.

Slice the pork diagonally and arrange on plates. Season meat juices with soy sauce and salt and drizzle over pork. Sprinkle with sesame seeds and cilantro and serve with salad.
