- 250 grams Pastry flour
- 10 grams fresh Yeast
- 1 tsp sugar
- salt
- 1 Tbsp freshly chopped Sage
- 150 grams Chestnut mushroom
- 2 Red Bell pepper
- 16 Sage
- Pastry flour (for the work surface)
- 2 Tbsps olive oil
- freshly ground peppers
Preparation steps
For the bread, sift flour into a bowl, make a well in the center. Crumble yeast into the well, mix with 1-2 tablespoons lukewarm water and sugar, cover and let rest for about 15 minutes.
Then, add 1 teaspoon salt, sage and 80 ml (approximately 3 ounces) of water and knead into a smooth dough, which detaches from the edge of the bowl. If necessary, add water or flour to reach desired consistency. Cover and let rest for about 45 minutes.
Trim mushrooms and cut in half. Rinse bell peppers, cut in half, remove seeds and ribs and cut into large pieces. Rinse sage and pat dry.
Divide bread dough into 16 equal pieces and roll into balls on a floured work surface. In alternating layers, stick 2 dough balls, mushrooms, sage and bell pepper on skewers, brush with oil and season with salt and pepper. Cook under a preheated oven broiler, watching carefully, for approximately 10 minutes until golden brown. Turn skewers during the cooking time as required. Serve immediately.
