6 Anchovy (chopped)
1 Tbsp fresh thyme (chopped)
1 cup white breadcrumbs
½ cup Parmesan (grated)
¼ cup Dried Tomatoes (in oil, finely chopped)
1 onion (finely chopped)
1 garlic clove (finely chopped)
6 Tbsps olive oil
4 red peppers (halved)
Arugula (to garnish)

Preparation steps

1.

Heat the oven to 400°F.

Mix together the anchovies, thyme, breadcrumbs, Parmesan, tomatoes, onion, garlic and 4 tbsp oil. Season with salt and ground black pepper and place the mixture inside the pepper halves.

Bake in a greased dish for approx. 30 minutes. If desired garnish with arugula.
