800 grams starchy potatoes
salt
1 ½ Tbsps finely chopped parsley
freshly grated Nutmeg
2 eggs (separated)
30 grams Pastry flour
coarse breadcrumbs

Preparation steps

1.

Peel and rinse the potatoes and cut into pieces. Cook for about 25 minutes until soft, let the water evaporate and then press through a potato ricer while still hot. Immediately mix with the egg yolks and season with salt, parsley and nutmeg. Mix in a little flour if necessary.

Form the mixture into small balls.

In a high pan, heat as much fat (oil or butter) as is necessary so that the balls can "float" in it.

4.

Whisk the egg whites in a dish and place the bread crumbs on a plate.

5.

Roll the potato balls in the egg whites and then in the breadcrumbs.

Fry in portions until golden. Drain and place on paper towels.

Serve hot or cold.
