4 Pork cutlets (each about 150 grams)

3 Tbsps sweet Mustard
4 Tbsps clarified butter
1 pc fresh Horseradish (about 4 cm)
2 Tbsps brown butter
1 lemon

Preparation steps

Rub the pretzel on a grater into fine crumbs and spread on a flat plate. Rinse the cutlets, pat dry, season with salt and pepper and spread lightly with mustard. Then place in the crumbled pretzel and press firmly. Cook the cutlets in hot clarified butter for about 4 minutes on both sides. For a nice breading, drizzle the butter repeatedly over the cutlets. Place on a plate with the fresh horseradish on top, sprinkle with brown butter and serve with lemon wedges.
