- 150 grams Arugula
- 1 Tbsp Crème fraiche
- 2 Tbsps olive oil
- 2 Tbsps lemon juice
- salt
- freshly ground peppers
- 1 pinch sugar
- 1 round Brie (about 600 g)
- 100 grams cream cheese
Preparation steps

Rinse about 125 g (approximately 4 ounces) arugula and spin dry and remove any thick stems. Blanch arugula briefly in boiling water, drain, rinse with cold water and drain in a colander and press out excess water.

Puree arugula, crème fraîche, cream cheese, oil and lemon juice and season with salt, sugar and pepper.
3.
Cut the brie wheel transversely and spread arugula cream over lower half and replace top half. Garnish with remaining arugula and serve.
