Broad beans, actually called broad beans, are a nutritious vegetable. They score points with vegetable protein, long-chain carbohydrates and important B vitamins. Pears help us get rid of excess water, as the potassium they contain ensures a healthy water balance in our body.

The bean salad is a delicious starter in late summer. If you would like to serve it, for example, as a side dish with a grilled pepper salmon, then you should prepare the recipe in double quantity.

500 grams fresh Broad bean (shelled)
4 Tbsps lemon juice
1 large ripe Pear
50 grams Pine nuts
2 stems mint
1 garlic clove (pressed)

Preparation steps

Peel and finely dice the shallot. Rinse and dry the beans, then cook for 5-6 minutes in boiling water. Shortly before the end of cooking, add the shallot. Pass through a fine strainer, then add with the lemon juice in a bowl. Rinse the pear and cut into wedges. Remove the seeds, finely dice, and mix into the beans. Toast the pine nuts in a dry pan until golden brown. Let cool and coarsely chop. Rinse and dry the mint. Remove the leaves, and coarsely chop. Mix the pine nuts, mint, and garlic into the salad. Season to taste with salt, pepper, and the oil.
