600 milliliters Vegetable broth
4 Tbsps slivered almonds (40 grams)
½ lemon
200 grams Herb cream cheese (0.2% fat)

Preparation steps

1.

Peel and finely chop the onion and garlic. Rinse the broccoli, divide into florets, peel and chop the stem. Rinse the basil, shake dry and pluck the leaves.

2.

Heat the broth in a saucepan. Add the broccoli, onion and garlic. Cook over low heat for 6 minutes.

3.

Roast the almonds in a dry frying pan. Rinse the lemon in hot water, pat dry, remove the peel and zest.

4.

Remove some of the broccoli from the pan and rinse in cold water. Set aside. Cook the rest for another 3 minutes. Add the basil and cream cheese. Mash everything.

5.

Serve the soup garnished with the broccoli, almonds and lemon zest.
