Ingredients

For the dough
150 grams Pastry flour
30 grams cold butter
1 pinch salt
2 Tbsps Quark

500 grams Broccoli
350 milliliters milk
250 milliliters Whipped cream
6 eggs
100 grams grated Gruyere
salt
freshly ground peppers
freshly grated Nutmeg
50 grams coarsely chopped Walnut

Preparation steps

For the dough, knead the flour, cold butter, salt and quark into a firm, smooth dough. If necessary, add a little water. Wrap in plastic and chill for about 20 minutes.

Preheat the oven to 180°C (approximately 350°F).

For the filling, blanch the broccoli in boiling salt water for 2-3 minutes. Rinse in cold water and drain well. Whisk the milk, cream, eggs and 50 grams (approximately 1.5 ounces) of cheese. Season with salt, pepper and nutmeg.

Roll the dough out and place in a greased quiche dish, forming an edge. Spread the broccoli and walnuts over the dough. Pour the egg-milk mixture on top. Sprinkle with the remaining cheese. Bake for about 35 minutes, until golden brown. Remove from the oven and serve immediately.
