2 ozs Shelled pistachio (4 TBSP.)
4 sprigs thyme
salt

Preparation steps

1.

Halve the melon and cut into slices a good 1/2-inch thick, cut 12 triangles from them; save the rest for another use.

Place melon wedges on a baking sheet lined with parchment paper. Slice the mozzarella and place on top of the melon pieces. Chop pistachios and sprinkle on top. Broil on low, in oven, for 6-8 minutes until cheese is golden brown.

3.

Wash thyme, shake dry, pluck leaves and sprinkle over melon wedges just before cooking. Season baked watermelon wedges with cheese with salt and pepper before serving.
